Xtreme Smoke Fish Brine

1/3 cup sugar
1/4 cup non-iodized salt
1 cup soy sauce
1 cup worcestershire sauce
1 cup non tap water
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp pepper
1/2 tabasco sauce
1 cup dry white wine
Let brine for at lease 12 hours in a cold place.
Pan of smoke every 1-2 hours
Smoke fish for about 4-6 hours
